 Soya chunks,sweet corn Pulao is Healthy Lunch Box Menu.

Ingredients:

Basmathi rice-1 cups(washed and soak in water for 30 Min's)
Onion(big)-1
Chillies-2 to 3
Sweet Corn-1/2 cup
Soya Chunks or meal maker-1/2 cup(washed and boiled in water till soft and squeeze excess of water)
Ginger garlic paste-1 tbsp
water-1 cup
Milk-1/2 cup
Coriander powder-1/2 tbsp
Coriander-1 bunch
Bay leaf -1
Cashews-5
Cinnamon stick-1
Cloves-3
Cardamom-1
Star Anise(anasa puvvu)-2 leaf lets
Oil or ghee-3 tbsp
turmeric powder-1/4 spoon
Salt-to taste

How to prepare:

  • Heat oil ghee in a low or heavy bottom vessel,add bay leaf,cloves,star Anise,cinnamon stick,cardamom stirr for few seconds.
  • Now add chopped onion,green chillies.Fry onions till they are golden brown colour.
  • Now add ca chews.
  • Now add ginger garlic paste, turmeric powder,saute for few secs.add coriander powder stirr it.
  • Now add sweet corn,soya chunks and mix well.
  • Add the drained basmati rice and mix well. Add 11/2(1/2 cup milk+1 cup water), add salt and coriander. Reduce heat to low and let it cook covered with lid.
  • Simmer the cooker and cover the pressure cooker and cook for 1 whistle. Switch off the flame and let the pressure go all by itself. If you are cooking in normal pan, cover the pan with a tight fitting lid. Simmer and Cook for 15 Min's, and leave it covered for 10 Min's.

Ingredients:

  1. Maida or All purpose flour-2 cups
  2. Jaggery-2 1/2 to 3 cups
  3. Ghee-1 1/2 cup
  4. Cardamom Powder or Ilachi powder – 1 teaspoon
  5. Food colour-few drops
  6. Cashew nuts-30(cut into pieces)
  7. Badam-30(cut into pieces)
  8. Raisins-3 tbsp

How to prepare:

  • Add 4 cups water to maida and make a thin batter with out any lumps,keep it aside.
  • Now add 1 cup of water to the jaggery and bring it to the boiling point.
  • Add food colour to the jaggery syrup,allow to cook till it reaches thread consistency.
  • On a low flame pour slowly maida batter,and stirr continuously.
  • When its getting thickening add ghee and stirr continuously till it leaves side of vessel.
  • Now add ilachi powder,very lightly fried cashews,badam and raisins and mix well.
  • Now transfer halfway into ghee greased plate and let it cool down.
  • Once halwa is cool,cut into square pieces

Ingredients:

Onion mediun size-4
Besan Flour-2 cups
Lemon juice -1/4 lemon
Myda or All Purpose flour-1 tbsp
Baking soda-1/4 spoon
Chilli powder-little
Salt-to taste
Oil-to deep fry

How to prepare:

  •  First add the flours in a bowl,add salt,soda,chilli powder and water, mix well. The batter should be of pouring consistency.
  • Now peel of onion  and cut it into round slices.
  • Heat oil in  kadai,when the oil is hot reduce the flame to medium.
  • Now dip the onion slices in the batter and see that it coats properly and fry them in the hot oil
  • Fry till they are golden brown in colour.
  • Serve hot with lemon.

Mirchi Bajji is an Indian Snack and is popular during the Rainy season and serve hot with onion and coconut cutney.
Ingredients:
Green Bajji Chillies-10
Besan Flour-2 cups
Vamu/ajwain/carom seeds-1/12 tbsp
Lemon juice -1/4 lemon
Myda or All Purpose flour-1 tbsp
Baking soda-1/4 spoon
Salt-to taste
Oil-to deep fry
How to prepare:

  •  First add the flours in a bowl, add ajwain, salt, soda, and mix well The batter should be of pouring consistency.
    Mix salt,lemon juice and Vamu/ajwain/carom seeds and keep it aside.
  • Slit the mirchi length wise.
  • Now fill the mirchi with salt,lemon juice and carom seeds.
  • Now Dip the mirchi in batter and see that it coats properly and fry them in hot oil.
  • Fry till they are golden brown in colour.
  • Before serving hot fill the mirchi bajji with chopped onion,coriander and sprinkle lemon juice on top.

In English Amla is known as Gooseberry, also known as Indian gooseberry.It is the major ingredient of the famous ayurvedic.Amla is one of the best herbs you can consume on daily basis without any side effectsIt has numerous health benefits, it's abundant in nutrients and packed with the power of Vitamin C.We need vitamin C to improve resistance of body i.e. to build immune system. Ingredients:
Ragi flour/Finger millet flour - 1 cup
All purpose flour or Maida - 1/2 cup
Sugar-3/4 cup(powdered)
Salt- 2 pinches
Butter - 1/2 cup, melted
Cooking Soda-Less than 1/4 spoon
Cashew nuts - to decorate

How to prepare:

  • In a large bowl  take Ragi flour,all purpose flour,salt,Butter(melted),Cooking soda and powdered sugar.Mix all together.
  • Mix all together with water,mix until you shape them into round balls.
  • Flatten round balls little.
  • Deep fry in the cooking oil.
