 Soya chunks,sweet corn Pulao is Healthy Lunch Box Menu.

Ingredients:

Basmathi rice-1 cups(washed and soak in water for 30 Min's)
Onion(big)-1
Chillies-2 to 3
Sweet Corn-1/2 cup
Soya Chunks or meal maker-1/2 cup(washed and boiled in water till soft and squeeze excess of water)
Ginger garlic paste-1 tbsp
water-1 cup
Milk-1/2 cup
Coriander powder-1/2 tbsp
Coriander-1 bunch
Bay leaf -1
Cashews-5
Cinnamon stick-1
Cloves-3
Cardamom-1
Star Anise(anasa puvvu)-2 leaf lets
Oil or ghee-3 tbsp
turmeric powder-1/4 spoon
Salt-to taste

How to prepare:

  • Heat oil ghee in a low or heavy bottom vessel,add bay leaf,cloves,star Anise,cinnamon stick,cardamom stirr for few seconds.
  • Now add chopped onion,green chillies.Fry onions till they are golden brown colour.
  • Now add ca chews.
  • Now add ginger garlic paste, turmeric powder,saute for few secs.add coriander powder stirr it.
  • Now add sweet corn,soya chunks and mix well.
  • Add the drained basmati rice and mix well. Add 11/2(1/2 cup milk+1 cup water), add salt and coriander. Reduce heat to low and let it cook covered with lid.
  • Simmer the cooker and cover the pressure cooker and cook for 1 whistle. Switch off the flame and let the pressure go all by itself. If you are cooking in normal pan, cover the pan with a tight fitting lid. Simmer and Cook for 15 Min's, and leave it covered for 10 Min's.

Ingredients:

  1. Maida or All purpose flour-2 cups
  2. Jaggery-2 1/2 to 3 cups
  3. Ghee-1 1/2 cup
  4. Cardamom Powder or Ilachi powder – 1 teaspoon
  5. Food colour-few drops
  6. Cashew nuts-30(cut into pieces)
  7. Badam-30(cut into pieces)
  8. Raisins-3 tbsp

How to prepare:

  • Add 4 cups water to maida and make a thin batter with out any lumps,keep it aside.
  • Now add 1 cup of water to the jaggery and bring it to the boiling point.
  • Add food colour to the jaggery syrup,allow to cook till it reaches thread consistency.
  • On a low flame pour slowly maida batter,and stirr continuously.
  • When its getting thickening add ghee and stirr continuously till it leaves side of vessel.
  • Now add ilachi powder,very lightly fried cashews,badam and raisins and mix well.
  • Now transfer halfway into ghee greased plate and let it cool down.
  • Once halwa is cool,cut into square pieces

Besan Flour-2 cups
Lemon juice -1/4 lemon
Myda or All Purpose flour-1 tbsp
Baking soda-1/4 spoon
Chilli powder-little
Salt-to taste
Oil-to deep fry

How to prepare:

  •  First add the flours in a bowl,add salt,soda,chilli powder and water, mix well. The batter should be of pouring consistency.
  • Now peel of onion  and cut it into round slices.
  • Heat oil in  kadai,when the oil is hot reduce the flame to medium.
  • Now dip the onion slices in the batter and see that it coats properly and fry them in the hot oil
  • Fry till they are golden brown in colour.
  • Serve hot with lemon.

Mirchi Bajji is an Indian Snack and is popular during the Rainy season and serve hot with onion and coconut cutney.
Ingredients:
Green Bajji Chillies-10
Besan Flour-2 cups
Vamu/ajwain/carom seeds-1/12 tbsp
Lemon juice -1/4 lemon
Myda or All Purpose flour-1 tbsp
Baking soda-1/4 spoon
Salt-to taste
Oil-to deep fry
How to prepare:

  •  First add the flours in a bowl, add ajwain, salt, soda, and mix well The batter should be of pouring consistency.
    Mix salt,lemon juice and Vamu/ajwain/carom seeds and keep it aside.
  • Slit the mirchi length wise.
  • Now fill the mirchi with salt,lemon juice and carom seeds.
  • Now Dip the mirchi in batter and see that it coats properly and fry them in hot oil.
  • Fry till they are golden brown in colour.
  • Before serving hot fill the mirchi bajji with chopped onion,coriander and sprinkle lemon juice on top.

Ingredients:
Ragi flour/Finger millet flour - 1 cup
All purpose flour or Maida - 1/2 cup
Sugar-3/4 cup(powdered)
Salt- 2 pinches
Butter - 1/2 cup, melted
Cooking Soda-Less than 1/4 spoon
Cashew nuts - to decorate

How to prepare:

  • In a large bowl  take Ragi flour,all purpose flour,salt,Butter(melted),Cooking soda and powdered sugar.Mix all together.
  • Mix all together with water,mix until you shape them into round balls.
  • Flatten round balls little.
  • Deep fry in the cooking oil.

Ingredients:

  • Brinjal very large-1          
  • Tamarind-lemon size(soak in  11/2 cup of hot water for 10-12 Mt's, extract thick juice)
  • Green chillies -4 
  • Water-1/1/2 cup        
  • Salt-To taste
  • Cumin seeds-1/2 tbsp
  • Mustard seeds-1/2tbsp
  • Coriander few leaves
  • Jaggery-Small piece
  • Curry leaves -1sprig
  • Red chillies-2
  • Garlic-3Crushed garlic flakes
  • How to prepare:

    • Apply oil on eggplant,roast the eggplant on a flame or in oven. Turn often all sides.The skin should be burnt and brinjal should be cooked completely.
    • In the same way  roast green chillies also(no need to peel the skin).
    • Now carefully peel of skin from the brinjal.
    • Now grind both roasted green chillies and roasted bringal into a rough paste in a mixer.
    • Soak tamarind in 11/2 cup of hot water for 10-15 Mt's, extract thick juice.
    • Place the mashed brinjal pulp in a large bowl,add tamarind extract to it and jaggery(adjust to your taste).Jaggery must be completely dissolved,add salt to taste and coriander.Allow it to boil once for 5 Min's.
    • Heat oil in a pan, add the mustard seeds, let them splutter. Add the cumin seeds and red chilli's,crushed garlic flakes and curry leaves, fry for a few more seconds.  Immediately add to the brinjal-tamarind mixture and combine well.
    • If it is too tangy you can add little jaggery,salt to adjust the tanginess.
    • Garnish with chopped coriander and serve hot with rice and dal(Mudda pappu)

    • Heat oil in a pan add chopped onians,chillies fry till they are golden brown colour.
    • Now add ginger garlic paste,saute till the raw smell leaves.
    • Now add mango pieces,turmeric powder,red chilli powder,corinader powder,garm masala powder fry for 1min.
    • Now add cachew nuts stirr.
    • Now add 1cup of water ,cook on a low flame with closed top.
    • Cook for 20 to 25 min on a very low flame.
    • Garnish witn cilantro or coriander,serve hot with rice.

    Cauliflower:

    Garlic:

An antioxidant found naturally in a number of foods, including tomatoes, lycopene is said to boost your cancer. Tomato juice keeps the blood stream alkaline and maintains a high resistance to disease.

    Broccoli sprouts:

    Brussels sprouts and contain many phytochemicals, vitamins and minerals. The nutrients in broccoli sprouts and their protective against multiple types of cancer.Specific compound found in broccoli, sulforaphanenact  as an anti-cancer copund. Broccoli sprouts that are specifically 5-6 days old contain over 100 times more Sulforaphane than a mature plant.

    Noni:

    Noni is a traditional food and medicine in many tropical areas including the Pacific Islands, Southeast Asia, India, and the Philippines. From the research results of several studies, the substance contained in the noni fruit is very beneficial for health. Noni prevents DNA adduct formation. Hence protects the cell from converting to cancer.

    Ingredients:

    Mutton-1/2 kg or 500 gms
    Curd thick- 2 tbsp
    Onions-3, 1 tablespoon
    Ginger garlic paste-1 1/2tbsp
    Green chillies-3,
    Zeera powder(cumin powder)-1/4 spoon
    Tomato-1(finally chopped)
    Coriander leaves-Chopped
    Red chilly powder-1 tbsp, ½
    Turmeric-1/4 tbsp
    Garam masala-1/4 tbsp
    Fennel seeds-1/2 tsp (Soak and grind to smooth paste)
    coriander powder-2 tbsp,
     Oil -3 to 4 tbsp
    Salt to taste.

    How to prepare:

    • Marinate  mutton (lamb)  with curd,ginger garlic paste-1/2 tbsp, Garam masala powder-1/4 tbsp,coriander pwd,turmeric pwd,red chilli pwd,jeera pwd (cumin pwd) and salt for half an hour.
    • Heat 3 tbsp of oil in a cooking vessel  add chopped onions,green chillies fry till they golden brown colour.
    • Now add 1 tbsp ginger garlic paste, saute till the raw smell leaves.
    • Now add chopped tomato,cook for 3 to 4 minutes over low flame untill the oil begins to leave the edges of the pan.
    • Now add marinated mutton cook on a medium flame for 5 Min's.
    • Now add Fennel seeds smooth paste,coriander leaves and garam masala and cook for another 5 Min's.
    • Add 1 cup of water,cook on a heigh flame till you get 18 to 20 whistles.
    • Do not speed the opening process by releasing the steam. Wait for it to leave by itself as the mutton will get cooked by that time.
    • Remove from pressure cooker garnish with coriander.Serve hot with rice or chapathi,roti

    Ingredients:

    All-purpose flour or Maida-1 cup

    Onion-1 big
    3 green chillies
    Yogurt or buttermilk-11/2 cup
    Coriander-chopped
    Chopped ginger-1/2 tbsp
    Curry leaves-chopped
    Salt to taste
    Oil for frying
    How to prepare:
    • Cut onions,green chillies,coriander,curry leaves and keep it aside.
    • Now take myda or all purpose flour in a bowl add chopped onions,green chillies,coriander,curry leaves  curd or yogurt,salt mix well with a consistency of idli batter.batter should not be liquid consistency
    • Heat the oil in pan,oil has to become very hot.
    • Now reduce the flame to medium.
    • Pour the batter with spoon or hand in order to get small balls.
    • Fry till they turn brown and remove .Serve with coconut chutney

    Ingredients:

    All-purpose flour / maida-1/12cup
    Curds / Yogurt -1 cup
    Sugar -3/4 cup
    Baking soda-1/2 tbsp
    Baking powder-11/4 tbsp
    Vegetable oil or refined oil or butter(I used vegetable oil for this recipe)-1/4 cup
    Vanilla essence-1 tbsp

     

    How to prepare:

    • Preheat oven to 350F / 180C.
    •  Mix all the ingredients,beat all ingredients in one direction using a beater or in a juicer mixer to make a smooth batter.Don't add any water to this paste.
    • Leave aside for 5 min. You will find that bubbles appear.
    • Grease the cake pan with butter or ghee and smear some maida / all purpose flour and pour the cake mix.
    • Bake in the pre-heated oven for 30-35 Min's until the cake turns to golden brown and a tooth pick inserted into the centre of the cake comes out clean, the cake is done and if the tooth pick comes with wet cake batter, the cake is not cooked.
    • Keep checking every 6-7 min if the cake is baked.

    Garlic paste-11/2 tbsp
    fried onions-2 tbsp
    Green chillies-4  
    Bay leaves-4
    Cinnamon-1 ½ inch
    Cardamom-4
    Cloves-10
    Star Anise(anasa puvvu)-1 flower
    Mace(Javithri or jaathipatri)-4
    Yogurt or curd-1 cup
    Lemon-1/2 cut
    Salt-to taste
    Oil-3-4 tbsp
    Cumin powder-1/4 spoon
    Coriander powder-1 tbsp
    Food colour-1 pinch

    How to prepare:

    • Soak rice in water for 30 Min's.
    • Pressure cook all vegetables for 1 vessel. After 1 vessel drain all the water from vegetables.
    • Cook the rice with 3 cups of water. The water added is less than is required, the rice should be half cooked.You have to cook the rice till it is ¾ done. Don't want to rice to get fully cooked, it will get cooked again  along with all vegetable with a closed lid .
    • When basmathi rice is soaked for 30 Min's ,to it add salt,oil 1 tbsp,1 tbsp chopped coriander2 cardamom,4 cloves,cinnamon stick ¼ Inc,bay leaf-2,Star Anise 2 leaflets,Mace or javithri 3 strands bring to boiling point cook until ¾ cooked.Remove all the remaining water my closing lid.
    • Now Marinate all cooked vegetables.To all vegetables add Ginger garlic paste, salt,oil,yogurt,cumin powder,chillies,dry onions,coriander powder,mace,star anise,cardamom,cinnamon,bay leaf,cloves,lemon juice and set aside for 1 -2 hour.
    • Now take a shallow pan,in the bottom of the pan add marinated vegetable and then another layer is cooked rice.Also add fried onions ,corianderonthe top.You can also add little bit of yellow colour or saffron mixed with warm milk You can also add a little saffron infused with warm milk and pour it on rice.
    • Now cover the pan with a lid.Then seal with wheat flour dough and let it sit for 15 more minutes on low heat. Turn off heat and let the biriyani sit for another 15-20 minutes, covered.
    • Gently stir in the masala from the bottom into the rice. The flavors released are simply aromatic.
    • Cooking Time and Water for each rice may vary. If you feel the rice is still a little hard, then add a little more water and cook on the lowest heat for a few more minutes with closed lid.

    Bread stuffed with potato is a very tasty and spicy snack.This snack is good to eat in afternoon at tea time.These are crunchy and spicy inside.These are prepared very easily at home with very less preparation time.
    Ingredients:
    Bread slices-8
    Potato's-2 medium size(boiled,peeled,mashed)
    Green peas(boiled)-1/4 cup
    Carrot grated-1/4 cup
    Ginger garlic paste-1 tbsp
    Salt-to taste
    Coriander-chopped
    green chillies-2
    oil-1 tbsp
    Oil-to fry
    Garam Masala -1/4 tbsp
    Turmeric-1/4 tbsp
    Lemon juice-1/4 tbsp
    How to prepare:
    1. Boil potato's and green peas for 3 vessels in pressure cooker.
    2. Heat 1 tbsp of oil in a pan add ginger garlic paste,when starts cracking add grated carrot,green chilli,fry for few Min's.when carrot get cooked add mashed potato,green peas,salt,turmeric powder,gram masala,coriander,lemon juice.stir fry for a minute. Turn of the heat.
    3. Take about 2 tbsp of mixture and roll then to oval shape.
    4. Now take water in a bowl for wetting bread slices.
    5. Now take bread slice dip in water one side lightly remove them immediately.Place the wet bread slice in between your palms press it to squeeze out access water.
    6. Place the mixture in the centre and then make it into a oval shape rolls.
    7. After making rolls wait for 5 Min's to fry.this will make some water evaporate from bread and so obs orbs less oil when frying.
    8. Heat the oil in a frying pan on medium to high flame.On a slow bread roll absorbs oil.
    9. Fry the Bread Rolls until they are golden brown, stirr occasionally.
    10. Take them out over paper towel. Serve them hot with coriander chutney,mint chutney or sweat and sour chutney.

    Urad Dal(soaked before 5 hours )-1 cup
    Salt- to taste
    Ginger Chopped(optional)-1 tbsp
    Onion(big)-1
    Chillies chopped-3
    Baking soda-1 pinch
    Curry leaves-chopped
    Coriander-chopped
    Zeera-1/4 tbsp
    Oil-to fry
    How to prepare Rajma Vada:

    1. Grind soaked urad dal into fine paste.While grinding urad dal don't add much water,add water less than 3 to 4 table spoons if required.The batter should be thick,it should not flow freely from hand when we drop down.
    2. To the grind paste add chopped ginger,salt,curry leaves,coriander,zeera and mix well.
    3. now add pinch of soda.
    4. Heat the oil in a kadai.Drop a small portion of the batter to check the oil. If it sizzles then the oil is ready to fry.
    5. Take water in a bowl,wet your hands with water(if u don't wet your hands with water,the batter will stick to your hands.Now Take lemon size portion of batter in your palm,make round shape patties.Make a hole in between patties
    6. Fry vadas till dark brown colour both side.
    7. Good to serve with coocnut chutny,mint chutny or sambar

    How to prepare Rajma Vada:

    1. Grind soaked chana and rajma beans into rough paste.
    2. To the grind paste add ginger garlic paste,salt,curry leaves,coriander,zeera and whole garam masala mix all and make vadas.

    Rice -2 cups(soaked in water for 15 min's)Or Basmathi rice(soacked in water for 30 min)
    Mint or pudina-1 medium bunch
    Onians medium-2
    Water(for normal rice)-3 1/2 cups
    Water(Basmathi rice)-3 cups
    chillies-4
    ginger garlic paste-1 tbsp
    Salt-to taste
    Oil- 4tbsp
    Turmeric powder-1/4 tbsp
    Cardamom or ilachi -3
    Cinnamon stick-2 inch
    Cloves-8
    Star anise-1
    Bay leaf-4
    Cashews -3 tbsp
    Lemon -half
    Coriander -1 bunch
    How to prepare Pudina Rice:
    • Wash rice,soak in water for 15 min.
    • Chop onions into finally chopped pieces.Grind pudina and chillies into paste
    • Heat oil in a pan add cloves,bay leaf,star anise,cinnamon stick and stir fry for about a minute.now add cashews stir fry till golden brown.Then add finally chopped onions,stir fry till golden brown colour.
    • Now add turmeric powder,grind pudina and chilli paste, saute till the raw flavor of the mint paste goes.fry till oil comes out.
    • Now add drain rice,lemon juice,water for normal rice 3 1/2 cups.For basmathi rice 3 cups,add coriander.If you are using pressure cooker,pressure cook for 3 whistles and switch off. If you are doing it directly in the pressure cooker pan, pressure cook for 1 whistle and lower the flame for another 5-6 minutes then switch off
