Nothing can beats freshness of home made ginger-garlic paste.Ginger Garlic paste is one of the essential part in our daily Indian cooking. Its really time saver if its made in large amount.

ingredients:
  • 1 cup chopped Ginger
  • 1 cup peeled garlic cloves
  • 1 1/2 tsp Salt
  • 3 tbsp oil

Preparation method:

  1. Combine all ingredients except the oil (or water) in a blender.
  2.  While blending, slowly add the oil (or water) until the paste has a smooth consistency.
  3. Place in a sterilized container, and store in the fridge.

This recipe was given by my friend santhoshi, who is from telangana.She showed me how to prepare Tapala Pindi and they also call them as Sarva Pindi/Spicy rice Flour pancake/Ginnappa.This a a traditional dish from telangana made as evening snack.Sarva pindi is a pancake made with rice flour, channa dal and chopped green chillies and  spices to make it a delicious and health.


Ingrediants:-


  • Rice flour-250 gm
  • Chana dal-1/2 cup
  • Sesame seeds-1 tbsp
  • Green chilli-3 Finely chopped
  • Onion 1-finely chopped
  • curry leaves-(chopped)1 spring
  • Chilli powder-1 tsp
  • Ginger garlic paste-1 tsp
  • Oil-2 tbsp
  • Water-as needed
  • Salt-To taste
How to prepare:-
  1. Soak chana dal in water for 30 min's.
  2. Now take bowl add drained chana dal  along with chilli powder, sesame seeds, onion , green chilli, curry leaves,ginger garlic and salt, mill well and then add water  little at a time, until chapathi dough consistency.
  3. Take a flat deep non stick pan, add oil spread all over the pan.
  4. Take a orange size dough and press it over the tawa with your hands till it gets even.
  5. Using your fingers makes small holes all over and drizzle some oil in the holes and cover it with a lid and cook in slow flame till it is golden brown color.
  6. If you need you can turn over and cook or else remove and serve with chutney.

  • Before boiling the rice add few drops of lemon and 1 tsp of oil.
  • Cook until 3/4th done and lets covered for 10 mins before serving.

Cooking time:-

Ingredients:

  • Unsalted butter-1 stick=(1/2 cup or 8 tbsp)
  • Powder sugar-1/2 or 3/4 cup
  • Eggs-2
  • Self-rising flour or all-purpose-flour-1 cup
  • Baking powder-11/2 tsp
  • Vanilla extract-1 tsp
  • chopped nuts-2 tbsp
How to prepare:

  1. Preheat oven to 350 degrees F/175 degrees c.
  2. Now take a muffins or cupcake pan and line with paper baking cups.
  3. In a large bowl add butter which is at room temperature and sugar until soft and fluffy with a electric or hand mixer.
  4. Then add eggs, one at a time and beat well. Add vanilla essence and mix well.
  5. Slowly add flour and mix on low speed until mixed.
  6. fill the liners with batter just 1/2 full.
  7. Add chopped nuts on the top of 1/2 filled liners.
  8. Bake in the preheated oven for about 18 to 20 mins.Check from 15 mins on wards.
  9. When cupcakes are done, place them on a cooling rack.
  10. You can decorate the cupcakes with frosting or leave as it is, and store them in a airtight container.

Lemon pickle is a popular pickle recipe made with lemons cut into pieces.Lemon Pickle also called as  Nimmakaya Pachadi/(Nimbu ka Achar.This is the method to prepares Healthy and Tasty traditional Nimmakaya vuragaya.

Ingredients:

  • Lemons – 5
  • Lemons for Juice – 6
  • Turmeric Powder – 1/2 tsp
  • Salt – 60 gms
  • Oil-1/2 cup
  • Fenugreek powder – 1 tbsp )
  • Mustard seed-1
  • Red dry chilies-3
For the preperation:
  1. Wash clean and dry lemons.
  2. Cut each leomon into 8 pieces, and remove if there are seeds.
  3. Take another 7 lemons, and extract juice from it with out seeds.
  4. To the lemon pieces add this extractes juice and salt mix it, cover with lid in a glass or ceramic vessel and keep it aside for 3 days with no contact with water.After 3 days lemon pieces will become soft.
For the Pickle preparation:
  1. Take large bowl, put the lemon pieces(which are stored  for 3 days) into it.  Add 1\2 cup red chilli powder, 1 table spoon Methi powder to it and check for salt. Mix well.
  2. Take a frying pan.  Heat 1\2 cup oil.  Add mustard seeds, Red chillies and Hing to it.  Let the mustard seeds splutter. Remove it from the flame and cool it.  Add the cooled thadka to the lemon pickle and mix well. Store it in a air tight jar.

Items needed:
Spray bottle,Baking soda,Cloth,Vinegar
The to clean oven: 
1 .Remove the oven racks
2. Mix spoons of baking soda with some water in the bowl. 
3. Spread the paste on the inside of the oven, Let sit over night. 
5. After one night take a wet cloth and wipe out the spread ed baking soda.
6. Put some vinegar in the spray bottle and spray on the surfaces where you still see baking soda, wipe with a wet cloth.
8. Keep the racks back in to the oven.
9. Turn on the oven on a low temperature for 15 mins, let it dry.

Nuvvula karam podi is Andhra style spice powder made with roasted sesame seeds as main ingredient and Lentils mix, goes very well with hot rice and ghee 
...
Ingredients:
  • Sesame Seeds(white)-150 gms
  • Urad dal-75 gms
  • Chana dal / Bengall gram-75 gms
  • Dry Red chilies-8
  • Cumin Seeds-1 tbsp
  • Coriander seeds-2 tbsp
  • Garlic cloves(crushed)-5
  • Dry coconut(grated)-2 tbsp/2 pieces
  • oil-1tsp
  • Salt-To taste
For the Preparation :

  • Take a pan dry roast cumin seeds,coriander seeds,garlic pods on a low flame and keep it aside
  • Add oil in a pan, Fry bengal gram,black gram,seasame seeds one after one on a low flame.Make sure don't burn them.
  • Allow the roasted stuff to cool down.
  • First start grinding  bengal gram and urad dal followed by dry red chilies,coriander,and cumin seed,garlic coarsely and keep it aside.
  • Add sesame seeds grind to coarse powder.
  • Mix all the grounded stuff and check for salt.Store in air tight container.
  • Serve with hot rice and ghee.

Prawn Fry/Royala vapudu  is a Famous Recipe in Andhra pradesh, which is the easiest method. You normally don’t go wrong with this recipe as it’s that easy Fried Prawns with the flavor of curry leaves make the dish just perfect. 

Ingredients:

  • Prawn/shrimp(Royalu-500 gms or 1 LB
  • Onion(grind to rough paste)-1 large
  • Green chilies stilted-3
  • Ginger garlic paste-1 tbsp
  • Chili powder-1 tsp
  • Turmeric powder-1/2 tsp
  • Coriander powder-1 tsp
  • Curry leaves(karivepaku)-1 spring
  • Garam masala powder-1/2 tsp
  • Coriander(chopped)-1/4 cup
  • Oil-3 to 4 tbsp
  • Salt-to taste 

For the preparation:

  1. First peel and clean the prawns.
  2. Take a pan add prawns, salt,turmeric powder cook on a low flame until all the water gets evaporate.
  3. Take another non stick pan, add oil.when oil gets heated add cooked prawns and fry for 10 Min's on a medium flame.
  4. Add ginger garlic paste and coriander powder, fry till the raw smell of ginger garlic paste leaves.
  5. now add roughly grind ed onion paste,silted green Chile's and curry leaves.Saute till the onions turn a light caramelized brown. It will takes up to 15 Min's.
  6. Add coriander, serve hot with rice.

Egg Fried Rice is a very simple and popular Indo Chinese recipe.This recipe is made with eggs, capsicum, onions. You can also use spring onions too. If you have leftover rice, you can use that too. The rice has to be cooled to room temperature as adding hot rice will make the rice stick to each other.

Ingredients:

  •   Oil/olive oil - 3 tbsp
  •   Cooked Basmathi rice - 2 cups
  •   Eggs-4
  •   Onion (chopped)- 1/2 cup
  •   Cabbage-1/4 cup
  •   Garam masala powder-1 tsp
  •   Carrot - finally chopped-1/2 cup
  •   Capsicum-1/2 cup
  •   Cilantro-1/4 cup
  •   Pepper powder-1 tsp
  •   Soya sauce - 2 tsp
  •    Salt -as needed
How to prepare:
  1. Heat pan add oil,when oil gets heated add green chilies, onions and fry till they are golden brown.
  2. Add the beaten eggs and stir fry the eggs. Stir the eggs. Make sure to make small pieces of the egg.
  3. Now add the finely chopped cabbage and carrot, Fry  for a 1 or 2 mins.
  4. Now add the finely long sliced capsicum. Fry for another  1/2 min on a medium flame.
  5. Add the garam masala and pepper powder. Stir well.
  6.  Add cooked rice. Stir veggies and rice so that the rice does not break into pieces. Add salt. Keep on stirring lightly till the rice and veggies have mixed well.
  7. We can also use 1 tsp of lemon juice, for extra taste.
  8. Garnish with coriander and serve hot.you This fried rice is good with out any side dishes.

  • Lemon juice-2 tsp

How to prepare:-

  • Wash and dry green apple,cut into cube shaped pieces.
  • Now add salt,red chili powder,methi powder,mustard powder,lemon juice and oil, mix well.
  • Serve the pickle after 1 day, so that all the flavors get absorbed.

Hyderbad Dum Biryani made in oven  is a technique of cooking in steam by not allowing the steam to pass. Hyderabadi Biryani in which chicken marinated and partially cooked basmati rice are layered and cooked on dum or slow flame along with herbs and spices. 

Ingredients:

  • Chicken (large or medium pieces)-1 kg or 2 lb(washed and drained)
  • Onions(into thin slices)-2
  • Ghee-1tbsp
  • Ginger garlic paste-1 tbsp
  • Oil-6 tbsp
  • Yogurt-1 cup
  • Coriander(chopped)1 cup
  • Salt-to taste
  • Food color-optional
  • Lemon-1

For the Rice Preparation-

  • Basmathi rice(best quality)-4 cups
  • Cloves-8
  • Cardamom-4
  • Cinnamon stick-1 "
  • Bay leaf-5
  • Oil-1 tbsp
  • Shahi jeera-1 tsp
  • Star anise-1 flower
  • Mace-1 
  • Salt-(adjust to taste)
  • Water-As required

Biryani masala powder:

  • Cardamon-4
  • Cinnamon-2"
  • cloves-15
  • Fennel seeds-1 tsp
  • Shahjeera-1 tsp
  • Mace-8 
  • Staranise-1
  • Peppercorn-10
  • Dry roast all the spices on a low flame, till nice aroma comes from it and make into p

For Marinating Chicken:

  • Yogurt-1 cup
  • Green chilies-6
  • Ginger garlic paste-2 tbsp
  • Biyani masala powder
  • Red chili powder-1 tbsp
  • Coriander powder-1 tbsp
  • Coriander chopped-1 cup
  • Lemon-1
  • Salt- to taste 

How to prepare Rice:

  1. Marinate chicken with all the ingredients(For marinating chicken) along with biryani masala powder.Keep aside for at least 2 hrs.
  2. Wash the rice add enough water to fully cover at least 4" over the surface of rice and soak basmathi rice in water for at least 30 min.Add salt,Cloves,Cardamom,Cinnamon stick,Bay leaf,Oil,Shahi jeera,Star anise,Mace.Cook the rice till it is 60% cooked.That means if you hold few grains and press between tumb and forefinger it should be hard enough and also it should be mashed when you press.Drain water.
  3. Heat 3 tbsp of oil in a pan add 1/2 amount of onions slices,fry till they are golden brown(caramelized).Drain and keep aside on a paper towel for later use.
  4. Heat remaining oil in a pan,add Remaining onion slices fry till they are golden brown, and also add ginger garlic paste fry till raw smell leaves.
  5. Then add Marinated chicken. Keep cooking for 10 to 15 mins on low to medium flame.
  6. Now add lime juice, coriander and salt to taste. Mix well.
  7. If you are using the food coloring, take 2 cups of rice add food color(orange or yellow)whar ever you like, mix the rice till all the grains are well colored and keep aside for 10 minutes after you can mix all the rice together in a bowl for use in the next step.
  8. Grease a deep baking dish with ghee and evenly layer the cooked rice and chicken with gravy. least 2 layers (rice-meat-rice-meat-rice). Garnish with the previously caramalised onions. Cover the dish tightly with silver foil. 
  9. Preheat oven set at 350 F/ 180 C  for 20 minutes.Turn off the oven and let the dish sit in the oven till you serve.

Chamadumpa pulusu is a traditional dish of Andhra Pradesh.Chamagadda/Arbi/Taro root is a spicy stew cooked with chilies,seasoning,tamarind juice and sweetened by jaggery. 

Ingredient:

  • Arbi/chemadumpa/Tato Root-300 gm or 1/4 kg
  • Onion(chopped)-1
  • Green chilies-4
  • Gingerlic paste-1 tsp-
  • Salt-To taste
  • Red chili powder-1 tsp
  • Turmeric powder-1/4 tsp
  • Coriander-To garnish
  • Tamarind-small lemon size(Ectract juice)
  • Coriander powder-1 tsp
  • Jaggery or sugar-1 tsp
  • Oil-2 tbsp

For the tadka/popu:

  • Curry leaves- 1 spring
  • Dry red chilies-2
  • Cumin seeds-1/4 tsp
  • Mustard seeds-1/4 spoon
  • Mentulu/menthi seeds fenugreek seeds-1/4 tsp

How to prepare:

  1. Boil arbi/taro root, peel of the skin and cut into medium size pieces.
  2. Add oil in a pan to this add 2 dry red chilies,mustard seed,menthi seeds,cumin seeds and curry leaves, fry till nice flavors comes out.
  3. Then add ginger garlic paste and fry oil for few seconds till raw smell leaves.
  4. Add chopped onions,green chilies fry till they turn to  golden brown color.
  5. Now add arbi/taro Root,salt,red chili powder,turmeric powder,coriander powder and fry for 5 mins.
  6. Add tamarind extract along with 3 cups of water and jaggery.
  7. Check for salt, cook on a low to medium flame for 15 to 20 mins till pulusu consistency or gravy consistency.
  8. Garnish with coriander leaves and serve hot with Rice.

Chola palak  is very healthy dish because of combination of  spinach and chola, Palak is high in iron while chana is rich in protein.Palak and Kabuli Channa taste awesome when put together.
Ingredients:-
  • Chick Pea-1 cup(boiled and keed aside)
  • Spinached(chopped)-3 cups
  • Tomatoes(chopped)-3 
  • Ginger&garlic paste-1 tsp
  • Green chillies-2
  • Oil-3 tbsp
  • Butter-1 tbsp
  • cumin seed-1 tsp
  • coriander powder (dhania)-1 tbsp
  • Turmeric-1/4 tsp
  • Red chilli powder-1/2 tsp
  • Salt-To taste
  • Garam masala-1/4 to 1/2 tsp
How to prepare:
  1. First soak the chola for overnight.
  2. Pressure cook chola or chickpea till they are soft(it will take 10 to 15 mins for pressure cook).
  3. Blend the tomatoes and chilies to make a puree.
  4. Heat oil in pan, add cumin seeds.when cumin seeds cracks add ginger garlic paste, fry till the raw smell leaves.Add tomato puree,coriander powder,red chili powder,turmeric powder and cook on a low to medium heat till oil separates from tamoto mixture.
  5. Now add spinach, salt and 11/2 cup water.Cook on medium to low heat for 10 min's.
  6. Now add chola or chick peas, add little more water if needed.Cook for 10 min's or cook until to get gravy consistency.
  7. Add Butter(optional) and cook for another 3 min's
  8. Add garam masala and serve hot with roti,chapathi,naan and rice variety.

Ingredients:

  • Toor dal or kandi pappu-1 cup(pressure cook for 3 whistles or until lightly soft)
  • Green chillies-3
  • Tomatoes-2(chopped)
  • Onion-chopped(long slices)
  • Turmeric powder-1/4 tsp
  • Chilli powder-1/2 tsp
  • For the tempering/poppu
  • Oil-1 tbsp

For the Tadka/Poppu

  • Mustard seeds-1/2 tsp
  • Cumin seeds/zeera seeds-1/2 tsp
  • Red dry chillies-2
  • Curry leave-1 spring
  • Garlic cloves-2 or 3
  • Chopped coriander-to garnish
How to prepare:
  1. Heat oil in a pan, add mustard seeds, when they splutters, add cumin seeds,red chillies,garlic,curry leaves and fry for few seconds.
  2. when they turn light brown add sliced onions,green chillies and saute for few more seconds.
  3. Now add chopped tomatoes and saute for another 5 to 6 min's.
  4. Now add slightly mashed dal, turmeric powder, chilli powder and 1 cup of water to the mixture and cook for another 10 more min's on medium  to low flame.
  5. Garnish with coriander and serve hot with rice or chapathi.

Chettinad Chicken, The most popular chicken curry in Tamilnadu(south India).Chettinad spicy chicken is a delicious,and spicy chicken recipe cooked with dry roasted spices.While Chettinad pepper Chicken goes perfectly with Dosa or Appams and parathas.

Ingredients:

  • Chicken-1/2 kg or 1 LB
  • Ginger garlic paste-1 tbsp
  • curry leaves-1 spring
  • Tomato small(chopped)-1
  • Red chilli powder-1/2 teaspoon
  • Turmeric powder-1/4 tsp
  • Lemon juice-1 spoon
  • Coriander powder-1 spoon
  • Cumin powder-1/2 spoon
  • Pepper-optional
  • Oil-2 tbsp
  • Salt-to taste
  • Water-1 cup
  • Chopped coriander-1/2 cup

For the Roast and Grind:

  • Coconut-small 2" piece
  • Dry red chillies-3 to 4
  • Poopy seeds/khus khus-1 tsp
  • Cardamom-1
  • Cloves-6
  • Cashews-1 tbsp
  • star anise 1/4 flower
  • Cinnamon 1" piece

For the preparation method:

  1. Heat oil in a vessel,add all ingredients listed under"roast and grind".Roast all ingredients on a medium to low flame until they turn to light golden color and grid to a smooth paste.
  2. Now heat oil in a pan, add onions and saute till they turn golden brown.Then add ginger garlic paste,saute until raw smell of ginger garlic paste leaves.
  3. Now add chopped tomatoes and saute for few mins.
  4. Now add grind masal paste and saute for few more mins.
  5. Now add chilli powder,turmeric powder,cumin powder,coriander powder,curry leaves and salt, cook for 8 mins.
  6. Now add chicken add cup of water and lemon juice, close the lid and cook until to get gravy consistency.
  7. Garnish with coriander and switch of the flame.
  8. Serve with Rice or pulao

  • Plain curd or yogurt-11/2 cups to 2 cups

For the Seasoning/Tadka/Popu:

  • Mustard seeds-1/2 teaspoon

  • Chana Dal-1 tbsp
  • Oil-1 tbsp
  • Urad dal-1/2 spoon
  • Peanuts/groundnuts-2 tbsp
  • Cashews-2 tbsp
  • Dry chillies or green chillies
  • Curry leaves-1 spring

Preparation method for Bread Dahi Vada:

  1. Whip curd with salt,chilli powder,turmeric and cumin powder.
  2. Heat oil in a pan tadka curd with mustard seeds,curry leaves,cumin seeds,red chillies,chana dal,cashews,urad dal and peanuts.
  3. Cut bread slices into round shape or what ever shape you like and toast them just enough that bread has become to light golden brown.Place then in a serving bowl.
  4. Cover bread completely with seasoned curd in serving bowl.
  5. Garnish with coriander and grated carrot.
