 Kanda pulusu or yam pulusu is another famous Andhra veg delight. It is prepared with yam and tamarind juice.Pulusu' means 'Stew'.yam cooked in tamarind extract and spiced up slightly.I enjoyed eating it.it was pretty good recipe enjoyed eating it.



Ingredients
  1. Red chilli powder-1 tsp
  2. chopped onion-1 cup
  3. Green chilies-4
  4. Tamarind(medium lemon size quantity) juice-1 cup
  5. cumin seeds-1/2 tea spoon
  6. water-2 or 3 cups
  7. sugar-1 teaspoon
  8. Coriander-chopped 1 cup
  9. Coriander powder-1 tbsp
  10. turmeric powder-little or 1/4 teaspoon
  11.  curry leaves-15
  12.  ginger garlic paste-1 tea spoon
  13. mustard seeds-1/2 teaspoon
  14. boiled eggs-3
  15. oil-2 or 3 tbsp
  16. Red dry chilies whole-4
  17. Yam-500 grams

How to cook:-

  • Peel yam and cut into square cubes.
  • Pressure cook yam on a high flame for about 2 whistles.
  • Now heat pan add oil,add some salt and turmeric powder.saute eggs lightly.
  • now remove eggs  from the pan keep aside.Add oil if needed,add mustard seeds,cumin seeds.when mustard seeds splutters add red dry chillies,green chillies,curry leaves and chopped onions.
  • saute onions till they are lightly golden brown color.
  • then add ginger garlic paste to the onions.Saute till raw leaves.
  • Now to the onions add the pressure cooked yam and fried eggs mix it well.
  • Now add water,red chilli powder,salt,tamarind juice,sugar,coriander powder and close it with a lid cook on a medium flame for 15- 20 mins. Let it come to thick gravy then switch of the stove or flame. 
  • Finely add coriander chopped  and serve with rice or roti.
